What was your inspiration?
This year’s inspiration was the trip that never happened – the pandemic rudely cancelled a long-awaited European cruise, so we wanted to give everyone who’s been cooped up for the last six months a taste of life along our interpretation of the Amalfi Coast in Italy. How long did you take to make your creation? Roughly 100 hours plus endless sleepless nights obsessing about the project. What was the most challenging part? Developing the structure and devising the scale. What are you most proud of? Not eating the baked gingerbread and diving headfirst into the unknown and flexing our muscles as thoroughly amateur home bakers – working without instructions, trying out new ingredients such as isomalt. Did you use a unique ingredient or technique? The coastal mountain is built from ramen noodles glued together with royal icing. |
